Apple, Pecan, and Blue Cheese Salad with Dried Cherries

We love this salad. I think I served it at every opportunity last year.

ingredients

  • 12Ounces —
    salad greens (spring mix)
  • 2
    whole apples, cored and sliced very thin
  • 1/2Cup —
    pecan halves
  • 1/4Cup —
    dried cherries
  • 6Ounces —
    blue cheese cut into chunks
  • 1Tablespoon —
    (heaping) Dijon mustard
  • 1Tablespoon —
    maple syrup (more to taste)
  • 1Teaspoon —
    apple cider vinegar (more to taste)
  • 1/4Cup —
    olive oil
  • salt and pepper, to taste

instructions

  1. Add greens, apple slices, pecan halves, dried cherries, and blue cheese chunks into a large salad bowl.

  2. Mix dijon, maple syrup, vinegar, olive oil, salt, and pepper in a small jar. Cover the jar with a lid and shake well to combine.

  3. Pour a little salad dressing over the top of the salad and toss to combine. Taste the salad and add more salad dressing to taste.
