
Black Bottom Cupcakes
My kids and the picky husband love these cupcakes.
ingredients
- 2Cups —Sugar
- 8Ounces —Cream cheese
- 1Each —Egg
- 5/8Teaspoon —Salt
- 1.5Cups —Flour
- 1/4Cup —Cocoa
- 1Teaspoon —Baking Soda
- 6Ounces —Chocolate chips
- 1Cup —Water
- 1/3Cup —Oil
- 1Tablespoon —White vinegar
- 1Teaspoon —Vanilla
- Pecans (optional)
instructions
Combine the filling items in a small bowl: cream cheese, egg, 1/3 cup sugar, and 1/8 tsp. salt.
Stir in the chocolate chips, and set aside.
To make the batter, sift dry items together: flour, cocoa, remaining sugar, baking soda, and salt.
Add water, oil, vinegar, and vanilla to the sifted ingredients.
Stir until well combined.
Fill the muffin cups with 1/3 cup of chocolate batter.
Top each cupcake with one heaping teaspoon of cream cheese filling
Sprinkle top with sugar and chopped pecans (optional).
Bake at 350 degrees, 30-35 minutes.
