Black Bottom Cupcakes

My kids and the picky husband love these cupcakes.

ingredients

  • 2Cups —
    Sugar
  • 8Ounces —
    Cream cheese
  • 1Each —
    Egg
  • 5/8Teaspoon —
    Salt
  • 1.5Cups —
    Flour
  • 1/4Cup —
    Cocoa
  • 1Teaspoon —
    Baking Soda
  • 6Ounces —
    Chocolate chips
  • 1Cup —
    Water
  • 1/3Cup —
    Oil
  • 1Tablespoon —
    White vinegar
  • 1Teaspoon —
    Vanilla
  • Pecans (optional)

instructions

  1. Combine the filling items in a small bowl: cream cheese, egg, 1/3 cup sugar, and 1/8 tsp. salt.

  2. Stir in the chocolate chips, and set aside.

  3. To make the batter, sift dry items together: flour, cocoa, remaining sugar, baking soda, and salt.

  4. Add water, oil, vinegar, and vanilla to the sifted ingredients.

  5. Stir until well combined.

  6. Fill the muffin cups with 1/3 cup of chocolate batter.

  7. Top each cupcake with one heaping teaspoon of cream cheese filling

  8. Sprinkle top with sugar and chopped pecans (optional).

  9. Bake at 350 degrees, 30-35 minutes.
