This unusual combination of common ingredients is fabulous! I made this marinade to celebrate a wonderful friend’s birthday. She and my husband both liked the flavor. I grilled this chicken indoors on the Breville indoor grill — perfect.

ingredients

  • 1/4Cup —
    Cider vinegar
  • 3Tablespoons —
    Prepared coarse ground, brown mustard
  • 3Cloves —
    Garlic, peeled and minced
  • 1Each —
    Lime, juiced
  • 1/2Each —
    Lemon, juiced
  • 1/2Cup —
    Brown sugar, packed
  • 1 1/2Teaspoon —
    Salt
  • 6Tablespoons —
    Olive oil
  • 6Each —
    Skinless, boneless chicken breasts, flattened (to cook evenly)

instructions

  1. In a large glass bowl, mix the cider vinegar, mustard, garlic, lime juice, lemon juice, brown sugar, salt, and pepper. Whisk in the olive oil. Place chicken in the mixture. Cover and marinate 8 hours, or overnight.

  2. Preheat an outdoor grill for high heat.

  3. Lightly oil the grill grate. Place chicken on the prepared grill, and cook 6 to 8 minutes per side, until juices run clear. Discard the marinade.
