Delicious and fast way to cook a near-perfect steak every time.

This calls for a Green Egg or Komodo grill, but it can be done on any grill that can get hot enough. The key to this is temperature and salting. The salt helps tenderize the meat; while you can salt overnight, the gains are minimal.

- Kosher salt
- Quality steak of your choosing
- Green egg or Komodo-style grill
instructions
Let the steak sit out for at least one hour to get to room temperature.
Apply salt to both sides and let sit for one hour.
Prepare the grill. Ideally, the grilling temperature should be between 600 and 700 degrees Fahrenheit. If your grill won’t go that high, extend the time (I have found adding 90 seconds on each side per 100-degree decrease).
After salting steaks and letting them sit for one hour, thoroughly rinse and pat dry. Add pepper or other preferred seasoning.
Place steaks on the grill for 90 seconds. Flip for another 90 seconds. Internal temp should be around 125. If you want medium, leave until internal temp is around 135 (another 90 seconds).
Remove the steak and wrap it tightly in foil for 5 minutes.
Serve steaks
