The picky husband saw this on Meat Church, and we made it the next day. Fabulous chili recipe. We reduced the amount of chili seasoning, but it was still a little too much for our taste. We went to 4 tablespoons, and we will probably try 3 next time — can’t imagine 5. Since we smoked the chuck roast, which we highly recommend, this was a two-day recipe. Speaking of the chuck roast, we started with a nearly 3-pound roast, and after trimming and smoke had just under two pounds, and we added it all. Smoked chuck roast is quite delicious on its own, and we will definitely try the poor man’s burnt end recipe.
This hearty, meaty chili will fill up the hungriest of appetites. This recipe yields a large batch of chili. This recipe contains 4 lbs of meat! 3 lbs of ground meat and 1 lb of chuck roast or stew meat. Any combination of meats works, but having plenty of ground meat, along with some large, chunky meat that will break down and become super tender during a 6-8 hour cook, is the best.
ingredients
- 2Pounds —Ground meat (Meat Church recommends venison)
- 1Pound —HOT breakfast sausage
- 1Pound —Chuck roast
- 3Medium red onions, diced
- 1Head (not clove) —garlic, minced
- 228oz can crushed tomatoes with juice
- 128oz Italian style diced tomatoes with juice
- 17Ounces —Chipotles in Adobo Sauce, diced. Preserve the liquid
- 12Ounces —Beer (sub beef broth)
- 5Tablespoons —Meat Church Texas Chili Seasoning. Adjust to your tast.
instructions
Add the olive oil to a very large skillet. I prefer cast iron. Sauté the onions, garlic, and adobo peppers (including all the liquid from the can). This is a lot of onions, so you may have to cook in 2 batches if you don’t have a really large skillet.
Cook for about 10 minutes until the onions are translucent. Remove the mixture from the skillet and place it in your slow cooker or Dutch oven.
Cook the ground meat and breakfast sausage thoroughly in the same skillet. Drain the fat and place all of the meat in the slow cooker or Dutch oven.
If you are starting with a raw chuck roast, cut it into cubes and brown it in a cast-iron skillet. Then place it in the Dutch oven or slow cooker.
If you are starting with a smoked chuck, cut it into small pieces and add it to the Dutch oven or slow cooker.
By this time, you already have the meat, onions, garlic, and adobo peppers in your slow cooker or Dutch oven. Now add the tomatoes with the juice, 1 beer, and 5 tablespoons of Meat Church Texas Chili Seasoning.
Cooking the chili
This chili can be cooked in 3 hours. However, it is better if you can cook it for 6-8 hours. The ingredients are already cooked at this point, but we will simmer this chili all day to break down the meat and meld the flavors together.
- If you are using a slow cooker, cook the chili on low for 6-8 hours, stirring periodically.
- If you are using a smoker, cook the chili at 225°F for 4-5 hours, uncovered, stirring periodically. Cover and continue to cook for 2-3 more hours.
Remove from the heat. Allow it to cool. Garnish and enjoy some of the best chili you have ever tasted!
