A simple and delicious recipe. These are great for tacos, burgers, or anywhere else you would use onions as a condiment.
Pickled Red Onions

The number of servings is really determined by how much you like onions. We added a single jalapeño, and it seems to be very mild, but that is probably pepper-dependent.
ingredients
- 2Each
Large red onions, sliced thin
- 1Cup
Cider vinegar
- 1Cup
Water
- 1Cup
Sugar
- 2Teaspoons
Kosher salt
- 1Each
Jalapeño sliced (optional for spice)
instructions
Add the water, cider vinegar, sugar, and salt to a medium pot and bring to a boil. Whisk until the sugar is dissolved.
Place the sliced red onions (mixed with jalapeño if you like) in mason jars or a food-safe container.
Pour the hot liquid over the onions. Allow the onions to soften and cool. Then screw on the lid and store in the refrigerator.
Pickled onions will last up to 3 weeks in an airtight mason jar in the refrigerator.
