Cowboy Butter

Cowboy butter is a delicious compound butter that is great for beef. Also great for baked potatoes.

ingredients

  • 1/2Cup

    Unsalted butter, softened

  • 4Cloves

    Garlic, finely chopped

  • 1Tablespoon

    Fresh flat-leaf parsley,

  • 1Tablespoon

    Fresh chives, chopped

  • 1/2Teaspoon

    Fresh thyme, chopped

  • 2Teaspoons

    Dijon mustard

  • 1Teaspoon

    Grated lemon zest plus 1/2 teaspoon fresh juice (from 1 lemon)

  • 1Teaspoon

    Smoked paprika

  • 2Teaspoons

    Meat Church Holy Cow

  • 1/4Teaspoon

    Chili powder

  • 1/4Teaspoon

    Crushed red pepper

instructions

  1. Stir together butter, garlic, parsley, chives, mustard, lemon zest and juice, smoked paprika, salt, black pepper, thyme, chili powder, and crushed red pepper in a medium bowl until well combined.

  2. Transfer butter mixture to a large sheet of plastic wrap or parchment paper, and roll into a log, shaping as needed. Holding both ends of the plastic wrap, twist the log until it is taut and uniform in shape. Refrigerate for 2 hours to let the flavors meld and the mixture firm up.

  3. To serve, remove from the refrigerator and cut into slices. Top steak, seafood, vegetables, or spread onto bread. Alternatively, melt and use as a dipping sauce.
